Soup Season

Hello Foodie Friends! My favorite season is approaching! SOUP SEASON! I enjoy the fact that I can make just about any food today a soup! Dump all the fixings in the pot and waaahlaaahh a snappy Soup! For the past 2 months straight my customers ask for me to make the same soup every week! I was tinkering with my original recipe and added our kitchen favorite cheese and some other do dads and boooyaaah Smokey Broccoli and Cheese soup was born! I love the smell of this soup, I would suck down the whole pot if I lacked self control (ehh yes I did have to make another pot lol)! So this soup will be apart of our weekly menu! This soup sells fast and reheats super well! One of our customers little one eats the broccoli unknowingly! We were so happy to hear that, we try to sneak as many veggies in our food to encourage healthy habits for all knowingly, and unknowingly! I am glad to say that it is totally keto friendly! Sincere's Kicking Cheesy Sandwich
2 tablespoons salted butter, cut into 3 even pieces
2 slices wheat bread
2 slices of pepper jack
1. Melt 1 piece of butter in a large nonstick skillet over medium heat until foaming subsides. Add both bread slices and cook, swirling occasionally, until pale golden brown on bottom sides, about 2 minutes.
2.Transfer bread to a cutting board, toasted side up. Place cheese slices on top of one slice, then close sandwich, with both toasted sides facing inward.
3.Melt 1 piece of butter in skillet and reduce heat to medium-low. Add sandwich and cook, swirling occasionally, until deep, even golden brown, about 5 minutes. Remove sandwich using a flexible spatula (of fork if you are super awesome)
4. Add remaining butter. Return sandwich to skillet, cooked side up. Season with salt. Cook, swirling occasionally, until second side is deep, even golden brown and cheese is thoroughly melted, about 5 minutes. Serve immediately.
